Tomato Cream Soup Tomato-Soup
TOMATO CREAM SOUP

3  Tablespoons olive oil
3  Large carrots, chunked
1  onion

Saute' carrots and onion in olive oil until crisp tender

Add:

2 - 28 oz Cans Whole Pelled Toatoes, "roma"
1/2 Quart chicken broth
1  Teaspoon dry basil

Simmer all vegtables for about 20 minutes.

Puree until smooth in a food processor

Season to taste with salt, pepper, 2 tsp. sugar ( if you like ).

Add:

1  Pint Heavy Cream

Heat through and serve.


****   Good with a grilled cheese sandwich.
