Scrambled Egg, Cheese & Bacon Casserole

2 c. soft bread crumbs (remove crusts)
1 ¾ c. milk

8 eggs
¾ tsp. salt
1/8 tsp. pepper
8 slices bacon, fried & crumbled
¼ c. butter
½ lb – cheese mixture;  Swiss cheese, Monterey Jack, and Sharp Cheddar

Soak ¼ to ½ inch bread cubes in milk.

Beat eggs slightly and add soaked bread with milk, then add seasonings.

Melt butter in large skillet and scramble until done.

Sir in ½ of cheese and pour into greased 2-quart baking dish; cover with other half of cheese and sprinkle with crumbled bacon.

Bake at 350* for 20 minutes until cheese melts.
